*Sigh* It has been a rough couple of weeks… 5 weeks to be precise! 5 weeks of baking, learning, mixing and decorating. And let me tell you- I am done! We were producing so much that at the end of the day I had no idea what to do with all these cakes and tartes. So I just gave them away to strangers on the train station or my neighbours or my collegues from work.

The big pastry program is about to start and suddenly I am getting a little nervous. Just to give you an idea of the way you become a pastry chef in Germany and Austria – you usually do an apprenticeship for 2 to 3 years first. That is where you will work in an existing bakery as an apprentice baker and you also go to pastry school.
I recently signed up for a pastry program to prepare for the big master exam. The course takes place in a pastry school two days a week. One day for four hours and the second day for 8 hours. So they basically try to teach you all the basics you need to know about the world of baking.
I started a pastry program a few days ago and the first two days are behind me and I have never been as discouraged as I am now!
